The BEST Thanksgiving Meatloaf with Cranberries

I have made this recipe for the holidays for years now and it never disappoints β I HAD to share this recipe with you guys!!
Hereβs how to make it!
INGREDIENTS
2 cups cranberries
1/4 cup sugar
1 white onion, finely diced
5 cloves garlic
1 cup cooked green lentils
2 mock meat burgers β I use @beyondmeat (or to omit mock meat add in another cup of lentils)
3 cups chopped mushrooms
1/2 cup chopped walnuts
1/2 cup ground flax
1/2 cup whole wheat flour
1 packed cup whole wheat breadcrumbs
1/2 a large apple, grated
1/2 cup dried cranberries
1/2 tsp salt
3/4 tsp pepper
1 tsp thyme
1 tsp Rosemary
1 tsp sage
1 tbsp soy sauce
Add the cranberries to a pot and cook over medium heat for a few minutes until the skins start blistering. Then spread them out inside a greased & lined baking tray.
Chop up your veg and add all of the rest of the ingredients into a large bowl.
Use your hands to mix everything together then pack down the meatloaf on top of the cranberries in three batches, making sure the mix is patted down well.
Bake at 375f for 60-70 minutes until the top is golden. Flip it out, slice & enjoy!
Best of all this meatloaf stays warm for one hour after cooking, just wrap it in tin foil and bring it to your family gathering!!
You can also make the loaf in advance, store it in the fridge and bake it the day of! Just allow for an extra 10-15 minutes of baking time!
