We have a Pasta Grandpa this week, who has taken up cooking in his retirement along with a hobby of napkin folding origami. He is inspired to make a pasta based on one of his napkins and makes a caponata sauce to go with it.
for a portion of pasta use 70g 00 flour, 30g semolina flour, 1/2 teaspoon turmeric, 1 tablespoon olive oil and 45ml (approx of water). You can double this.
For the caponata, use 1 celery stick, one onion, one aubergine, 700g fresh tomatoes, 50ml tomato passata, 2 tablespoons of tomato concentrate, 1 tablespoon sugar, 2 tablespoons of wine vinegar, 100g pitted olives, 25g capers, 20g pine nuts (toasted). The masala is optional!
