Ingredients for the Creamy Tomato Pasta: (serves 2)

½ cup cashews (~70g)
½ cup non dairy milk, unsweetened
1 tbsp nutritional yeast
juice of ½ lemon
1 yellow onion
1 tsp minced garlic
1 tsp italian seasoning
chili flakes to taste
salt, pepper to taste
water or olive oil for sautéeing
1-2 tbsp tomato purée
1 can diced tomatoes
pasta of your choice, I used about 220g
