Happy Wednesday! Summers been great so far! lets take it up a notch though, what do ya say? YES? … This recipe will blow your mind! Squash blossoms🌼 in a quesadilla!? Yup you read that right. If you make any of my recipes this is the one you HAVE to make. Creamy, crispy, ooey gooey and just all around an amazing dish to add to your picnic spread. And yes the blossoms are perfectly safe to eat and add this floral taste that is unexpected but absolutely phenomenal!!
Ingredients
4 Tbsp of olive oil + some for cooking quesadillas
2 medium yellow squashes
4 gloves of garlic (minced)
spice blend
1/2 tsp Chili powder
1/2 tsp chipotle powder
1/4 tsp smoked cumin
1/4 tsp mexican oregano
1/4 tsp salt
1/8 tsp pepper
8 small quash blossoms (chopped)
4 8′ flour tortillas
2 Tbsp of vegan cream cheese(optional but highly recommended)
2 C of shredded vegan cheese
Lime “crema”
1/3 C of vegan sour cream or plain yogurt
2 tsp of fresh lime juice
1/4 tsp salt and pinch of pepper
