I’m Feeling Like…something healthy but something yummy
I had some chickpeas and a can of coconut milk left in my pantry so I just googled some recipes that I can make with those ingredients and then did a little improv along the way! caramelizing the onions with garlic and ginger and spices is a pretty standard first step when cooking Nepali/Indian style curry, but adding the coconut milk is kind of unconventional as far as Nepali/Indian curries go. But hey, you gotta work with what you got and it was yummyyyy. Anyway, completing the dish with some citrus and cilantro/coriandar to balance out the spices and salt is the right move for sure.
