When it comes to dinner, stir-fry is a staple in our house! Mostly because we conveniently have a ton of veggies on hand which is why it’s so easy to make this dish whenever we want.
In this recipe, I added some baked tofu. But if you’d prefer to fry your tofu, then that’s fine too.
This perfect healthy lazy meal is quick and easy to make! Which makes this dish enjoyable any day of the week!
Baked Tofu:
1 pkg firm tofu, cubed
1 tbs sesame oil
1 tbs soy sauce
1 tbs arrowroot flour
Mix tofu with sesame oil and soy sauce. Coat tofu evenly with arrowroot flour. Bake 400, 30 minutes (turning halfway)
Teriyaki Peanut Sauce:
1/4 cup soy sauce
2 tbs sesame oil
2 tbs brown sugar
2 garlic cloves, chopped
1 tbs peanut butter
1 tbs sriracha (optional)
1 tbs sesame seeds
2 tbs water
Mix all ingredients in a bowl. Once tofu is done baking in the oven, marinade tofu and sauce and set aside.
Veggie Stir-fry
1 small onion, chopped
3 cups broccoli, chopped
1 carrot, chopped
1 zucchini, chopped
1 cup king oyster mushroom, chopped
1 small red pepper, sliced
Saute your veggies in 2 tbs of sesame oil. Once veggies are cooked, set aside. Throw marinaded tofu with sauce in the same pan. Once the sauce thickens, add cooked veggies and warm through. Serve over some brown rice and enjoy!
