¾ cup of soaked cashews
1 diced onion
2 diced celery stalk
2 carrot diced
5 cups of veggie broth or 1 vegetable bouillon and 5 cups of water
4 cups of finely chopped broccoli floret
Stems from broccoli
Salt and pepper to taste
1 cup of unsweetened soy milk
2 medium potatoes diced
¾ cup Nutritional yeast
½ tsp nutmeg
1/8 tumeric (for color) optional
¾ cup of Daiya Cheddar shreds or any vegan cheese of choice
