Easy Thanksgiving Side Dishes | Vegan Holiday Recipes!

RECIPES WRITTEN BELOW! Thanksgiving is coming up soon in Canada and we know it can be tough being vegan around the holidays, so we want to share easy to make recipes that use simple ingredients that will satisfy you, your family and the most discerning omni’s 😉

02:20 – Vegan stuffing recipe
1 tbsp vegan butter (or cooking oil of your choice)
1 large white onion
2 cloves of garlic
4 stalks of celery
1 apple
2 vegan sausage links
1/3 cup pecans
1 loaf of bread, dried out (either in oven or left out over night)
1 tbsp dried sage
1/2 tbsp rosemary
1 tsp thyme
1/2 tsp salt (or too taste)
1/4 tsp black pepper
1.5 cups vegetable broth

Directions:
Preheat oven to 350 F. Chop onion, garlic, celery, and apple and sauté in vegan butter on medium heat for 5 minutes. Add chopped pecans and chopped sausages and sauté until the onion is translucent. Remove from heat.

Add the chopped dried bread to a large mixing bowl, add seasonings and sauté mixture. Add 1/2 cup of vegetable broth and mix well. Repeat until you’ve used all the vegetable broth (1.5 cups). The bread should be moist but not wet. Add more vegetable broth if needed. Add mixture to a large baking dish and cover with tinfoil. Bake for 45 minutes then remove tinfoil and bake for an additional 10 minutes until top is browned. Remove and Enjoy!

08:41 – Roasted garlic veggies
1 large sweet potato
4-5 Yukon gold potatoes
3 large carrots
2 tsp oil (add more if you want)
3-6 cloves of garlic
Salt and pepper to taste

Directions: preheat oven to 350 F. Chop potatoes and mix them with 1 tsp of oil, salt & pepper in a large bowl. Add to a baking dish and cook for approx 10 minutes. Potatoes take longer to cook than sweet potatoes and carrots, so while the potatoes are cooking chop sweet potatoes and carrots. Season with oil, salt and pepper and add to potatoes. Cook for approx 30 minutes. Remove from oven and add chopped garlic. Cook for an additional 20-25 minutes, or until golden brown.

NOTE: to cut down cooking time, roast the veggies on a higher heat (400 F) for a shorter amount of time. Because we were baking the stuffing at the same time, we had to use a lower heat. Do what works for you!

12:12 – Gravy Recipe
4 cups cremini mushrooms, chopped
2 cups onion, chopped
2 tbsp cup veggie broth (for cooking)
2 tsp tamari (or braggs for cooking)
Sauté together and add to a blender with the following:
2 Tbsp miso Paste
1/4 cup nutritional yeast
2/3 tsp thyme
2/3 tsp rosemary
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
2 Cups vegetable broth
Blend everything together and then simmer on low for 10-15 minutes. Enjoy!
