Today I’m doing the assumptions tag (ft. my eating disorder recovery, my sexuality, etc.) whilst baking healthy, vegan sourdough cinnamon buns! CINNAMON BUNS RECIPE (makes 13):
BUNS:
⭐️ 75 g active (fed) sourdough starter
⭐️ 370 g flour (I used 100 g plain white flour and 270 g wholemeal)
⭐️ 115 g butter/margarine (melted)
⭐️ 40 g apple sauce (I left it chunky and added raisins and cinnamon)
⭐️ 125 g almond milk (or other plant-based milk)
FILLING:
⭐️ 30g butter/margarine (melted)
⭐️ 40 g apple sauce (as before; you can also use sugar)
⭐️ 1-3 tbsp ground cinnamon
⭐️ pecans
Combine the ‘buns’ ingredients and knead for 3-5 minutes. (If making the apple sauce from scratch, use one large apple, add raisins and cinnamon, and allow to soften in a pot at medium heat with a tiny layer of water.) Once the ingredients are combined, cover with a damp tea towel and leave in a warm place to rise for 1-2 hours.
Whilst it rises, combine all the ingredients for the filling!
After 1-2 hours, dust a clean surface with flour. Scoop the dough onto the surface and roll it out into a large rectangle. Spread the filling over the rectangle. Starting from the long side, roll the dough into a tube. Use a sharp knife to cut rolls!
Place the rolls on a baking tray, leaving a little space between each roll to allow them to grow. Cover the tray with a tea towel and allow them to rise for another 1-2 hours (or overnight in the fridge).
When you’re ready to bake the rolls, preheat the oven to 180°C (350°F). Bake the rolls for 15-20 minutes. They are ready when they are golden-brown and a fork comes out clean when poked into the dough. For extra tastiness, eat when slightly warm and drizzle with peanut butter :).
They keep well in the fridge for 3 days, but can easily be frozen and popped into the microwave later too.
