A recipe for mini, gluten-free, vegan apple cider doughnuts…yum!
Recipe:
Yield: 18 mini doughnuts
1 1/2 cups gluten-free oat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp ginger
1/8 tsp cloves
1/4 cup brown sugar
1/4 cup apple sauce (unsweetened)
1 Tbsp olive oil
1/3 cup apple cider
1 tsp vanilla
glaze:
1 cup powdered sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1-2 Tbsp apple cider
Preheat the oven to 350 degrees. Grease a mini doughnut pan. Combine the dry ingredients. Add the wet ingredients to the dry, and mix well. Pipe the batter into the pan using a ziplock bag. Bake 8-10 minutes. Let doughnuts cool in the pan for a few minutes, and then dump onto a rack to finish cooling completely.
To make the glaze–whisk the powdered sugar, cinnamon, and nutmeg together. Add the apple cider one tablespoon at a time, until the right consistency is achieved. Dip the cooled doughnuts into the glaze, and let them dry until the glaze hardens. Enjoy!!
