Channa Masala is an Indian style curry made with Chickpeas/Garbanzo beans. It’s a great option for vegetarian/vegan source of protein.

Ingredients for Channa Masala:
Chickpeas (Garbanzo beans/Channa) โ 1 ยฝ cups of dry chickpeas, soaked in plain water for 4-6 hrs and cooked until soft;
Onions โ finely chopped, 3 cups;
Tomatoes โ crushed/ finely chopped, 1 ยฝ cups;
Garlic paste โ 1 ยฝ tbsp;
Ginger paste โ ยพ tbsp;
Green chillies โ 1 or 2 no;
Curry leaves (optional) โ 5 to 10 no;
Spices โ 1 or 2 bay leaves, 1 ยฝ tsp cumin seeds (jeera), 1 ยฝ tsp turmeric powder, 1 ยฝ tbsp coriander powder; 1 ยฝ tsp red chilli powder (or as per taste), ยพ tsp cumin powder, 1 ยฝ tsp garam masala powder, 1 tsp Kasoori methi/dried fenugreek leaves (optional);
Salt to taste;
Sugar โ 1 tsp;
Coriander leaves/Cilantro to garnish;
Cooking oil โ 4 tbsp
