Cheesy Broccoli Potato Soup
5 medium golden potatoes
1 lb leeks (I used frozen from Trader Joe's)
1 tbs minced garlic
10oz crimini mushrooms
2 medium tomatoes
2 cups corn
1 red bell pepper
1 lb broccoli florets
1/2 cup nooch
1 tbs smoked paprika
1 tbs mustard powder
1/2 tbs onion powder
Dash of cayenne
Dash of black pepper
1/2 tbs seasoning salt (Add more to your bowl if you'd like)
1 cup water
1 32oz veggie broth

Instant pot manual for 10 minutes. Natural release for 15 minutes then quick release. Carefully remove and blend the big chunks of broccoli and some liquid in a blender and then add back into the pot. Ready to serve.
