Cheezy Broccoli Rice Bake
Ingredients:
1 pound or more Broccoli Florets (cut into bite size pieces)
2 cups Rice (soaked in water for at least 45 minutes)
1 1/2 Russet Potatoes (peeled & steamed)
1 large Sweet Onion (steamed)
2 whole Carrots (steamed)
1 Bouillon Cube or the Equivalent
1/4 cup Hemp Seeds or Raw Cashews
1/4 cup Lemon Juice
1/2 cup Nutritional Yeast
1 teaspoon Granulated Garlic
1 teaspoon of Harissa
1 Tablespoon Chili Powder
1 1/2 teaspoons Sea Salt
Water for Blending & Cooking
Optional Breadcrumbs for Topping
Blend together all of the ingredients except for the Broccoli, Rice & Bread Crumbs. Add enough water to make mixture quite thin.
Place the Drained Rice & Broccoli In a large casserole dish and cover with the sauce. Mix well and top with Breadcrumbs if desired.
Bake covered at 375 degrees for 45 minutes or until the rice is soft and has absorbed all of the liquid. If necessary add more liquid if rice is too dry and bake for an additional 15 minutes. If you want the top crispy, bake uncovered for the last 15 mins.
Let the casserole rest for 15 minutes after it comes out of the oven.
