This is how I make my vegan cinnamon rolls! Giving the dough time to rest makes for delicate and fluffy rolls. It’s the perfect recipe for a relaxed afternoon of baking.
▷ Ingredients for dough:
250 ml (1 cup) plantbased milk
60 gr (1/4 cup) white sugar
2 1/2 tsp dry yeast
375 (3 cups) gr bread flour
1 tsp cinnamon powder
1/4 tsp salt
60 gr (1/4 cup) plantbased butter
▷ Ingredients for spread:
2 tbsp plantbased butter
75 gr (1/3 cup) brown sugar
2 tsp cinnamon powder
▷ Instructions:
1. Add the sugar to the lukewarm plantbased milk. Add the yeast and mix, leave to bloom for 10 minutes.
2. Put the flour in a bowl, add the cinnamon powder and salt.
3. Add the wet mixture to the dry mixture and knead until combined well. Knead in the butter. Keep kneading until you get a stretchy dough. This can take up to 15 minutes. Do window pane test to check for gluten development.
4. Cover and leave to proof for 1 hour.
5. Make butter spread. Mix 2 tbsp butter, 2 tsp of cinnamon powder and 75 grams of brown sugar.
6. After one hour, knead out the air out of the dough. Cover and leave to rest for 15 minutes.
7. Knead the dough and roll out into a rectangular shape.
8. Evenly put on the butter spread.
9. Roll from the widest part and pinch the seams. Divide in how many rolls you want, 8-10 works best.
10. Place in a lined baking tin, cover and let proof for 30 minutes.
11. Bake on 180°C for 15-20 minutes.
12. Leave to cool for 15 minutes before adding any toppings.
