Gobi Manchurian is a popular Indian-Chinese fusion recipe in which crispy batter-fried cauliflower florets are coated with a yummy manchurian sauce. It is an excellent vegetarian/vegan starter recipe!

Ingredients for Cauliflower Manchurian:
Cauliflower – cut into small florets, 3 cups;
Marinade for the cauliflower (optional) – 1tsp garlic paste, half a tsp each of ginger paste, salt and crushed black pepper, 1tbsp corn flour/corn starch;
For the Batter – half a cup of all-purpose flour/maida, quarter cup of corn flour, approx. half a cup of water;
Oil for deep frying;
For the Manchurian Sauce – 2tbsp oil, 1.5 tbsp chopped garlic, 1tbsp chopped ginger, 1 tbsp red chilli flakes/finely chopped green chillies, half a cup of finely chopped onion, 2 tbsp of chopped spring onion white, Sauce mixture – 2 tbsp each of soya and chilli sauces, 3tbsp of tomato ketchup/sweet ‘n sour sauce, 1 tbsp sugar, 1 tsp white vinegar (optional).
For garnishing – finely chopped coriander leaves/cilantro and green spring onion.
