Try this Roasted Veggie Quinoa Bowl, It’s is loaded with deliciousness and packed with amazing flavours! Itβs a healthy and tasty one bowl meal recipe which will definitely become an instant favourite!
INGREDIENTS
*1/2 cup quinoa
*1/2 tsp salt
*1/2 cup green beans, diced
*3/4 cup mixed bell peppers, chopped
*a handful cherry tomatoes
*1/4 cup green peas
*1 tbsp olive oil for cooking the veggies
*1 cup water to cook the quinoa
*1/3 cup spring onion, chopped
INGREDIENTS FOR SAUCE
*1/4 cup cashew (soaked in hot water for 30 minutes)
*1 tbsp extra virgin olive oil
*1/2 tbsp honey/ maple syrup
*2 cloves of garlic, chopped
*1 tbsp lemon juice
*1/2 tsp chilli powder
*1/4 tsp salt
*1/2 tbsp water
*some crushed black pepper as required
*a pinch of Italian seasoning
INSTRUCTIONS
1- Rinse the quinoa well. Add water in a saucepan and bring it to boil. Add in the quinoa and turn the heat low. Cover the pan and let the quinoa cook for 15-20 minutes or till it turns fluffy.
2- For the garlic cashew sauce, discard the water from the cashew and add them in a blender along with the rest of all the ingredients of sauce. Blend till the sauce turns smooth & creamy.
3- To roast the vegetables, heat up about a tbsp of oil in a pan. Add in the veggies and roast them on a medium-high heat for around 3-4 minutes.
4- Assemble the bowl – Add the quinoa in a bowl, followed by roasted veggies, chopped spring onion and garlic cashew sauce. Toss well to combine and enjoy!!
