Easy Vegan Cheesy Broccoli Potato Soup Recipe:
1 white onion, diced
2 cloves garlic, minced
1 carrot, peeled and diced
14 oz frozen plain hash browns such as Alexia Brand
1 tsp paprika
1 tsp dry thyme
1/2 tsp salt
1/2 tsp pepper
2 cups vegetable broth
1/4 cup nutritional yeast
1 cup frozen chopped broccoli florets
1/2 cup frozen corn
Heat a large soup pot over medium high heat.
Add a splash of water (or tbsp of oil).
Add onion, carrot, and garlic, along with a pinch each of salt and pepper, stir and cook until veggies are tender 5-7 minutes.
Add frozen hash browns and spices, stir, cover and cook for 2 minutes.
Add vegetable broth and bring to boil.
Remove soup from the heat, and using an immersion blender, puree the soup (or add soup to a blender after cooling for 5 or so minutes).
Stir in nutritional yeast, corn, and broccoli.
Cook 2 more minutes until veggies are heated through.
Serve and top with fresh herbs such as thyme, basil, or chives (optional!)
