Recipe:
150g whole grain spelt flour
1/2 teaspoon baking powder
50g coconut sugar
1 heaping teaspoon gingerbread spice
50g coconut oil melted
3 tablespoons maple syrup
2 tablespoons apple sauce
1. Mix the dry ingredients and the wet ingredients in seperate bowls, then mix it all together and knead using your hands.
2. Form the dough into a ball. It will be pretty soft and sticky that’s why we put it in the fridge for one hour.
3. Take the dough out of the fridge and roll it out, about 0,5 cm thick. The thinner the dough, the crispier the cookies will be.
4. Cut out the cookies with your preferred shape.
5. Put them on a baking sheet lined with baking paper and bake them in a preheated oven at 180 degrees Celcius for 10 minutes.
6. Allow them to cool down on the tray.
Optional: Icing
1. Mix about 50g powdered sugar and a tiny bit of water. Add the water slowly because the icing has to be pretty thick.
2. Decorate your cookies using a knife, brush or tooth pick.
Store the cookies in an air-tight container!
