Enchiladas are delicious and you can have so many filling combinations! Today we are doing bean enchiladas – these are actually vegan as well if you omit the cheese or use a vegan replacement! This is actually a pretty healthy meal as well (depending on how much cheese you use :P) and it’s inexpensive too, so great for meal prepping or for students!
