Today we’re making these amazing pumpkin spice cinnamon rolls! I know October is over BUT there’s no reason to get off the pumpkin spice bandwagon right!

RECIPE:
Dough
3 Cups All Purpose Flour
1 Cup Warm Almond Milk
2 1/4 Tsp Yeast Instant Yeast or Active Dry Yeast **Different procedure for each below**
1/2 Cup Cane Sugar **Separate 2 Tbsp for yeast**
1/3 Cup Room Temp Vegan Butter
1 Tsp Pink Salt
Filling
3 Tbsp Vegan Butter Room Temp
1/2 Cup Brown Sugar
1 Tbsp Pumpkin Spice Seasoning
1/2 Tsp Pink Salt
Icing
2 1/2 Cups Powdered Sugar
1/4 Cup Plant Milk
4 Tbsp Pumpkin Purée
1/2 Tbsp Pumpkin Spice
1 Tbsp Maple Syrup
1 Tbsp Brown Sugar
1/4 Tsp Vanilla Extract
Pinch of Pink Salt **Optional**
INSTRUCTIONS:
In a large bowl, add warm milk 2 Tbsp sugar and yeast (see below for deats👇🏽)
*******Active Dry Yeast Instructions******** Proof for 10-15 minutes in a warm spot. Mixture should foam. If this doesn’t happen the yeast is dead. This could be due to hot water (temp should be warm to touch or 110 – 115°F). Don’t fret!! Try again!
*******Instant Yeast******* Congratulations! You get to skip the proof step. Move on!
Add into same bowl the rest of the sugar, pink salt and vegan butter. Mix well, best done with a whisk, before adding in flour in increments. Mix thoroughly before adding more flour. You will need to switch off to a rubber spatula or your hands eventually
Mix the dough just enough to bring it together. DO NOT OVER MIX. Very little kneading is required. Add additional flour if needed to help with stickiness. Once dough comes together, let rest in bowl covered with a warm damp towel and warm place for about 1 hour or until doubled in size
While that’s rising, move on to the pumpkin spice sugar. Combine brown sugar, pumpkin spice seasoning and mix well
After dough has doubled, on a well floured surface, roll out the dough to 1/4 inch thick. Spread vegan butter on and cover the whole surface and sprinkle pumpkin spice sugar evenly over top and then roll tightly into a log
Cut log in half then cut each half into half and then again each half into half
Set in buttered pan and cover and rest for another 30 min to an hour or until they have doubled in size
Half way through rising, preheat oven to 350°F
When rolls have doubled in size, place in center of oven and bake for 25 – 30 min or until golden
While rolls are baking make your icing!
ICING
Combine all icing ingredients together EXCEPT powdered sugar and mix thoroughly
Heat on medium allow to simmer lightly but not boil
Reduce to about half then remove from heat and allow to cool down
Add powdered sugar and mix until clumps are gone
When rolls are done baking remove from oven and drizzle on icing before enjoying!!
