Ahh, Saibaβs Vegan Breakfast Ramen. This one took me off guard. I have NEVER had a ramen like this before. It was surprisingly light, well balanced and could easily be eaten for breakfast. Unlike that Apple Risottoβ¦I stand by that one.
Trust me, its pretty easy to make (aside the noodles) and well worth the effort!

250g Bread Flour
250g AP Flour
250g Water
50g Yuzu
5g Salt
5g Sodium bi-carbinate
Broth:
1cup Soy Milk (unsweetened)
4cups Water
3 Large pieces of Konbu
6 Dried Shiitake Mushrooms
3 small Ebi Taro
3T Charred Miso
Vegetables:
Fried Burdock
Fried Lotus Root
Roasted Carrots
Roasted Turnips
1 Pack Tempeh (about 12oz)
1 cup Teriyaki*
*Teriyaki
200ML Soy Sauce
200ML Mirin
200ML Sake
