These cookies are so tasty!
Vegan, HCLF, Whole Ingredients, and Gluten-Free (Just make sure to use certified Gluten-free oat flour, if youβre intolerant )
HCLF Vegan Gingerbread Cookies
1 1/4 Cup Oat Flour
12 Pitted Medjool Dates
1/4 Cup Coconut Sugar
1/4 Cup Molasses
2 TSP Grated Ginger
1 TSP Baking Powder
1/2 TSP Baking Soda
Pinch of Salt
Pinch of Nutmeg
1/8 TSP Clove
1/2 TSP Cinnamon
3 TSP Orange Juice
+ Orage Zest (Optional)
Put all ingredients into a food processor and process till a tacky dough is formed.
Wrap and chill for several hours in freezer.
Preheat oven to 350 degrees
Flour surface well and roll out dough to 1/4 inch thick.
(Dough will be sticky, so make sure to use enough flour. Also make sure dough stays cold, it will become even more sticky when warm)
(Wipe dough with a damp cloth to remove excess flour, if you like your cookies to look clean and un-floured)
Cut out into your favorite shapes!
(Be careful when cutting out, did I mention the dough is very sticky?)
Line a pan with parchment paper and bake cookies in a 350 degree oven for 10 minutes.
Remove from oven and let cookies cool before decorating.
