This is a healthy n simple recipe that incorporates green leafy vegetables.

Ingredients:

Palak/Spinach โ€“ 3 cups, roughly chopped;
Methi/Fenugreek leaves โ€“ 1 cup, roughly chopped;
Green peas (Frozen/boiled) โ€“ 1/4 cup;
Onions โ€“ 3/4 cup, chopped;
Garlic โ€“ 2 tbsp, finely chopped;
Ginger โ€“ 1 tbsp, finely chopped;
Lime/lemon โ€“ 1/4 wedge;
Green chillies โ€“ 1 tbsp, finely chopped;
Coriander leaves/cilantro โ€“ few twigs;
Green onion/spring onion โ€“ 2-3 twigs;
Cumin seeds/Jeera โ€“ 1tbsp;
Cooked rice โ€“ Approx. 3 cups;
Salt n pepper to taste;
Cooking oil โ€“ 2 tbsp.
