Green Fried Rice| Palak Methi (Spinach n Fenugreek leaves) Rice| Vegetarian/Vegan Recipe
This is a healthy n simple recipe that incorporates green leafy vegetables.
Ingredients:
Palak/Spinach โ 3 cups, roughly chopped;
Methi/Fenugreek leaves โ 1 cup, roughly chopped;
Green peas (Frozen/boiled) โ 1/4 cup;
Onions โ 3/4 cup, chopped;
Garlic โ 2 tbsp, finely chopped;
Ginger โ 1 tbsp, finely chopped;
Lime/lemon โ 1/4 wedge;
Green chillies โ 1 tbsp, finely chopped;
Coriander leaves/cilantro โ few twigs;
Green onion/spring onion โ 2-3 twigs;
Cumin seeds/Jeera โ 1tbsp;
Cooked rice โ Approx. 3 cups;
Salt n pepper to taste;
Cooking oil โ 2 tbsp.
