Ingredients:

Buddha Bowl:

Vegetables:
• 2 tbsp Olive Oil
• 1/2 Onion
• 2 Pumpkin
• 1 cup Broccoli
• 1 Kale
• 1/4 tsp Salt
• 1/4 tsp Black Pepper
• 1 cup Quinoa

Chickpeas:
• 50 gms Kabuli Chana
• 1 tsp Cumin
• 3/4 tsp Red Chilli Powder
• 3/4 tsp Dry Garlic Powder
• 1/4 tsp Salt
• 1/4 tsp Black Pepper
• 1/4 tsp Turmeric Powder

Tahini Sauce:
• 1/4 cup Tahini Sauce
• 1 tbsp Maple Syrup
• 1/2 Lemon’s Juice
• 2-4 tbsp Hot Water

Vegan Fruit Cake:
• 220 gms Oats Atta
• 200 gms Sugar
• 1/2 tsp Salt
• 240 ml Soy Milk
• 2 tsp Vanilla Essence
• 1 tbsp Olive Oil

Frosting:
• 300 gms Powdered Sugar
• 45 gms Vegan Butter
• 4 tbsp Soy Milk
• 2 tsp Vanilla Extract

Garnish:
• Edible Flowers
• Berries

Method Of Preparation

For Buddha Bowl

1. Add a cup of pumpkin in a bowl along with diced onions, broccoli, olive oil, black pepper, salt to taste and Mix it well with a spoon.
2. Spread it evenly on a baking tray and Bake it at 204 degree Celsius for 8-10 minutes .
3. Then add kale, spinach and Bake for another 4-5 minutes.
4. Now add kabuli chana, dry garlic powder, turmeric powder, red chilli powder, black pepper, salt to taste, cumin, olive oil and Mix it together.
5. In a pan, pour in some olive oil, add in the chickpeas and Saute it for a minute.
6. To make the dressing, add some tahini sauce, maple syrup, lemon juice and Mix it well.
7. To assemble the Buddha Bowl, begin with adding a cup of quinoa, roasted vegetables, caramelised kabuli chana and finally drizzle with tahini dressing made.

For Vegan Fruit Cake

1. Take oats atta in a bowl along with sugar, baking soda, vanilla essence, vinegar, olive oil and soy milk. Fold it until it gets completely mixed.
2. Pour the batter made in a baking tray and Bake it at 200 degree Celsius for about 30-40 minutes.
3. For the frosting, take a bowl, add vegan butter, sugar, vanilla extract and Whisk it nicely while pouring in the soya milk. Refrigerate the contents for some time.
4. To Assemble, take a cake slice, layer the base with frosting, place another cake slice on the base and apply another layer of the frosting.
5. Put the blueberries, raspberries, edible flowers and chopped strawberries on top of the cake.
6. Ready to Eat and Serve!
