RECIPES:
Avocado Corn Salsa:
1 cup corn
1 medium tomato, diced
1/2 avocado, diced
1/4 cup red onion, finely chopped
1 tbsp liquid sweetener such as maple syrup, agave
1 tbsp lime juice
hot sauce to taste
Tacos:
2 portobello mushrooms cooked with soy sauce and pepper
handful of kale, washed and chopped
tortillas or taco shells
avocado corn salsa (recipe above)
Lentil Sloppy Joes
2 cups cooked lentils
1/2 white onion, chopped
2 cups tomato sauce
1 tsp vinegar
1 tbsp lime juice
1/4 tsp pepper
1/2 tsp chilli powder
1 tsp smoked paprika
2 tbsp coconut sugar
Simple Coleslaw:
1 cup shredded lettuce and carrot
1 tbsp vegan mayo
Lemon Tahini Bowl:
rice
raw veggies
avocado
sesame seeds
green onion
Lemon Tahini Sauce:
2-3 tbsp tahini
1 tbsp lemon juice
1 tbsp sugar or maple syrup
1 tbsp soy sauce
water if needed to thin it out
