In this video, I’m showing you everything I ate on a day where I wanted to start fresh, nourish my body in a loving way with healthy, whole, simple, vegan foods and reset my system.
This is not a miracle cure for weight loss, but eating this way helps me feel really good and full of energy. When I eat this way consistently my weight is never an issue and I have almost no cravings.
It’s been a long (wonderful) month of vegan indulgences for me, so I’m excited to eat fresh and start feeling good again! Let me know if you’re in the same boat!

Vegan Smoothie Recipe
spinach
ripe banana
frozen berries
pitted medjool date
hazelnut milk
grond ginger
cardamom

Quinoa
Sweet Potato
Ground cumin
Mixed lettuce + spinach, chopped
cucumbers
tomatoes
red onion
olives
artichoke hearts
sweet + hot peppers (these are from Trader Joe’s)
avocado
lemon
tahini
salt + pepper
Quick Vegan Lentil Soup
1 large carrot
1 large stalk of celery
onion
garlic clove
turmeric
cumin
thyme
rosemary
cayenne pepper
black pepper
soy sauce ( I use like 2-3 tsp)
water (about 3/4 of a cup)
veggie broth (about 1 cup to 1.5 cups)
optional: potatoes and brocoli. Steam potatoes for a few minutes until almost fork tender, then add broccoli. Drain water and return to pan with a tiny bit of coconut oil, salt, and pepper. Sauté until crispy on edges. I actually like doing this sportily because the potatoes get crispy and the broccoli flavor doesn’t overpower the soup. I find that when I cook it all together, the whole soup tastes like broccoli. Try it this way if you have time. It can be done while the soup is cooking 🙂
For the soup:
Bring to a boil, reduce heat, cover, simmer for 20 minutes until lentils are soft and veggies are tender.
Again, this isn’t an exact recipe but I can make one for you if you’re interested!
