Saute the eggplant in a large frying pan over a medium heat with a little olive oil for a few minutes until it starts to turn golden brown. Add the chopped Tomatoes, tomato Paste, red beans chickpeas, dried chilli Powder, salt and pepper to taste, and mix so everything is evenly coated. Cover and simmer for 4-6 minutes until everything is completely heated through.

2οΈβ£ 1/2 cup chickpeas and red beans boiled
3οΈβ£ 1 cup eggplant π
4οΈβ£ 1 tomato π
5οΈβ£ 1 tbsp tomato paste π
6οΈβ£ 1/8 tsp chili powder
7οΈβ£ Salt and black pepper
