🌿 FULL RECIPE🌿
INGREDIENTS
For Breakfast Sausage
1 cup Texturized Vegetable Protein (TVP) ( I use Bob’s Red Mill)
1 cup water or vegetable broth to rehydrate the TVP
1/4 cup instant oats
2 tbsp grated beet,
2 black garlic bulbs (optional)
1 tsp liquid smoke
½ cup vital wheat gluten ( I use Bob’s Red Mill)
2 tbsp Italian Spice Mix
1 tbsp fennel seed, crushed
1/2 teaspoon smoked paprika
1 tsp salt
1/2 tsp black pepper
3 -5 tsp crushed red pepper flakes
For Sandwich
1 package of English Muffins
1 Package (12 oz) of Firm Tofu
5-6 slice of vegan cheese (recipe:
INSTRUCTIONS
For Breakfast Sausage
Bring 1 cup water or vegetable broth to a boil and pour over the TVP.
Stir and fluff with a fork.
Place all the ingredients into a large food processor.
Pulse until well combined. It should be chopped up fine but not too mushy.
Mix in vital wheat gluten for about a minute making sure not to over mix. For some recipes that use vital wheat gluten you will want to knead the dough until it becomes stretchy. This will create a meaty pull apart texture. For this recipe we just want to knead enough that it will bind with the tvp so we can achieve more of a ground result.
Grab a spoonful of the mix and press into desired shape.
Set in the fridge to bind for at least an hour.
When you are ready to cook Add oil to a pan over medium-low heat.
Cook patties for about 10 minutes on each side.
*You can also place these in the air fryer for 15 minutes on 370’ .
For Sandwich
Take a block of firm tofu and cut into ½ inch slabs. Use a bowl or cookie cutter to form an egg round shape and place on the grill at high heat for about 3 minutes on each side.
Toast an english muffin and add you add fried tofu, breakfast paddie, and a slice of vegan cheese.
Top and enjoy.
