INGREDIENTS
300g Quorn Pieces
2 tbsp vegetable oil
1 onion, thinly sliced
1 red pepper, deseeded and sliced
1 yellow pepper, deseeded and sliced
200g fine green beans, cut into bite size pieces
2 garlic cloves, crushed
1 tbsp smoked paprika
Couple of strands of saffron
1 tsp mild chilli powder
250g long grain rice
900ml vegetable stock (made with 2 stock cubes)
100g cooked beans of your choice β black eyed beans, kidney beans etc.
400g fresh tomatoes, skinned and chopped
200g frozen peas
Salt and freshly ground black pepper to taste
3 tbsp parsley, roughly chopped
Olives and lemon wedges to garnish
METHOD
Put half your oil in big frying pan, and when it’s hot, add the onion, peppers and green beans, cooking for 3 minutes.
Then put in your garlic and tasty spices and give it 2 more minutes.
Add the rice to the pan, along with the stock. Put a lid on and simmer for 20 minutes. Make sure you stir quite often.
In the meantime, heat the rest of the oil and fry the Quorn Pieces for 2-3 minutes until they’re delicious and golden.
Put them on one side.
Turn the heat down on your big pan, add your cooked beans, fresh tomatoes and peas, and cook for 5 more minutes.
Season the way you like it.
Turn off the heat and sprinkle on the chopped parsley, decorating with olives and lemon wedges.
