FULL RECIPE BELOW. Have to admit, I’m a bit afraid of carbs in the form of pasta. I’d rather just load up on sweets – but this dish is so yum. Thought I was going to bring some back for the office, but I ended up keeping it for myself.

4-5 cloves fresh garlic
2 ½ c tightly packed washed organic spinach (about 10 oz)
1 ½ oz fresh basil (about 1 c loosely packed)
1 cup walnuts
Zest of 1 lemon
Juice of ½ lemon
½-1 t mineral salt (start with less– more to taste)
½ c extra virgin olive oil
¼ c nutritional yeast
8 oz box GF pasta of choice, cooked and drained (save some of the cooking water to make the pesto creamier and easier to mix with pasta)
Peel and chop garlic, and leave out for 10-20 minutes while preparing the rest of the ingredients.
In a food processor, blend chop spinach and basil together. You will have to stop and mix it manually a few times to make sure all the leaves get broken down.
Add walnuts, lemon zest and juice, salt, garlic, olive oil, and nutritional yeast, puree until desired consistency is reached.
Toss ½ c pesto with 1 (8 oz) box cooked pasta, splashing it with the reserved cooking water to help loosen the pesto as you mix it in. (If you forgot to reserve some pasta water, just use a little warm water, no worries!!)
This pesto recipe makes 2 cup, and is sufficient for 4- 8 oz boxes of GF pasta, about 16-20 servings total
