VEGAN PULLED PORK NACHOS I am SHOOK…my radical and very rainbowtastic recipe belongs in your mouth right now! This week I cooked up a loaded and layered Pulled Pork Nacho platter using some juicy king trumpet mushrooms and @adozencousins zesty beans.
Can’t have tortilla chips? Swap them out for baked sweet potato circles or roasted cauliflower for a flavorful and healthy meal!

VEGAN PULLED PORK NACHOS:
Tortilla Chips or Baked Sweet Potato Circles (6-12 Cups)
Vegan Cheddar Cheese (1.5 Cups) @followyourheart
Vegan Mozzarella Cheese (1.5 Cups) @followyourheart
Cooked Beans of Choice (2 Cups) @adozencousins
MUSHROOM PULLED PORK:
Oil or Vegetable Broth (4 Tbs) @pompeian
Sliced White Onion (1 Cup)
Shredded or Sliced King Trumpet Mushrooms (4 Cups)
Smoked Paprika (2 Tbs)
Pork or Steak Seasoning (4 Tbs) @mccormickspice
Nutritional Yeast (3 Tbs)
Vegan Worcestershire Sauce or Liquid Aminos (2 Tbs) @wanjashan
Apple Cider Vinegar (1 Tbs) @bragg
Liquid Smoke (½ Tsp)
Maple Syrup (1-2 Tbs)
Salt and Pepper to Taste
Barbecue Sauce (⅓ Cup) @fodyfoods
(SAUTÉ ONIONS UNTIL CLEAR, ADD IN SHREDDED MUSHROOMS, SEASONING, AND COOK UNTIL SOFT. ADD BBQ SAUCE LAST AND MIX IN. COOK AND MIX IN SAUCE UNTIL THE PULLED PORK IS DARK BROWN AND LIQUID IS EVAPORATED)
TASTY TOPPINGS:
Diced Tomatoes
Sliced Red Onions or Chopped Cabbage
Green Onion or Cilantro
Jalapeño Slices
Lime Wedges
Salsa @fodyfoods
LOAD A COVERED BAKING SHEET WITH CHIPS, THEN CHEESE, BEANS, PULLED PORK, MORE CHEESE AND THEN BAKE FOR 5-10 MINUTES AT 425F OR UNTIL THE CHEESE IS FULLY MELTED. COVER WITH TASTY TOPPINGS AND SERVE.
