Today we have a very special guest aka my roommate/youtuber Lindsey Rem!! We’re cookin up some bomb plant based enchiladas. This is one of our fav recipes, it’s super easy and so delicious! Even if you aren’t vegan you seriously have to try this!

Plant Based Enchiladas:
INGREDIENTS:
10-12 Tortillas
2 Sweet potatoes
1 Poblano pepper
1 Onion
3 Cloves garlic
1/2 cup black beans
2tsp oregano
2tsp cumin
Salt to taste
1 24ox can diced green chilies
Vegan cheese of choice (we love Violife)
1 Jar green enchilada sauce
STEPS:
1. Preheat oven to 425
2. Peel, chop & roast sweet potato for 15-20 mins ( until you can easily pierce with a fork)
3. Chop onion, poblano, & garlic. Season with oregano, cumin & salt. Saute until tender and slightly toasty
4. In a bowl combine mashed sweet potato, sauted veg, 1 can diced green chilies, 1/2 cup black beens and 1/4 cup cheese.
5. Warm tortillas and assemble by placing filling in the center & rolling.
6. Place in a greased 9×12 baking dish seam side down and cover with enchilada sauce & cheese.
7. Bake at 425 for 20-25 mins
