This is a modified recipe that was inspired by BrownVegans’s lentil soup. Apologies if the video is a little quick. The amount of lentil soup will serve 8. I typically put it in the fridge or freezer so I can eat it everyday for lunch/dinner.

Coconut Curry Lentil Soup
Ingredients
1 Cup of Yellow Lentils
1 Cup of Brown Lentils
1 Cup Chopped Onions
1 Cup Chopped Mushrooms
1 Cup Chopped Celery
2 Cup Vegetable Broth
2 Cup Water
1 Cup Canned Coconut Milk
1 tbsp Minced or Clove Garlic
Spices
Curry Powder
Salt
Pepper
Garlic Powder
