This meal is super filling, delicious and nutritious. It has warm roasted veggies and fresh spinach over soft fluffy quinoa😊
✨Ingredients:
Serves 4
-1 cup dry quinoa
-1 cup plum tomato diced
-2 cups cut up cauliflower
-1 can of chickpeas
-Spinach
-1-2 tablespoons fresh parsley
-Olive oil
-Turmeric
-Garlic powder
-Chili powder
-Paprika
-Sea salt
-Kosher salt
-Pepper
✨Dressing:
-1/3 cup olive oil
-1-2 tablespoons fresh parsley
-1 tablespoon apple cider vinegar
-1 tablespoon lemon juice
-Dried Basil
-Garlic powder
-Oregano
-Sea salt
-Pepper
✨Directions:
-Preheat oven to 400
-Cook quinoa per instructions on the container
-Combine your dressing ingredients and set aside
-Drain, rinse, and let your chickpeas dry while preparing other ingredients. When dry, pat with paper towel. Add 1 1/2 tablespoons olive oil, kosher salt, pepper, garlic powder, paprika and red chili powder. Mix. Cook in the oven for 25-30 mins shaking every 10 minutes.
-Season your diced tomatoes with 1 tablespoon olive oil, sea salt and pepper. Mix.
-Season your cut up cauliflower with 1 tablespoon olive oil, sea salt, pepper and turmeric. Mix.
-Cook the tomato and cauliflower in the oven for 17-20 minutes. Flip half way.
-When everything is done build your bowl. The bowl in the video served 2. Use half of your quinoa. 1 cup of cut up spinach. 1/3 cup tomatoes. 1/2 cup cauliflower. 1/4 cup chickpeas. Mix your dressing again, use 2 tablespoons. Mix everything and enjoy!
-With the ingredients leftover you should get another 2 servings. Store everything together besides the dressing. When reheating add the dressing.
