Ingredients:
1 cup rice (soaked in water for 20 minutes to a maximum of 1 hour, No more than that)
1+ 1/2 cup water OR chicken stock
1 cup frozen vegetable (carrot and peas )
1/4 teaspoon salt or to taste
1 tablespoon olive oil
1 bay leaf (optional)
