SWEET POTATO, CHICKPEA & QUINOA CURRY // vegan, oil-free, high-protein

MAKE SURE TO CHANGE THE QUALITY TO HD!

This is a recipe for sweet potato, chickpea and quinoa curry. Its vegan, oil free, and a super healthy post workout meal, full of plant protein and good nutrients. (Also great for meal-prep!).

Ingredients:
500g sweet potato
3 garlic cloves, crushed
3 teaspoons ground turmeric
1 teaspoon ground coriander
1 teaspoon chilli flakes or powder (I didn’t have any, so I just used some curry paste I had in the fridge)
1 teaspoon ground ginger
400g can of coconut milk
1 tbsp tomato purée
180g quinoa
400g can of chickpeas, drained and rinsed
150g spinach
400g can of chopped tomatoes
salt and pepper
