| Easy Vegan Thanksgiving in a Bowl |
You want a quick and easy meal that can satisfy your THANKSGIVING cravings? This roasted veggies, toasty pecans, mashed potatoes, and easy vegan gravy, all in 1 bowl and ready in less than 1 hour is the perfect warmth that will surely bring you comfort! You can brag that it is VEGAN, HEALTHY, HEARTY, FILLING, GLUTEN FREE, & DAIRY FREE!
Roasted Veggies Ingredients:
2 large Carrots, peel and cut into 4ths
1 acorn Squash, sliced
4 cups of Broccoli heads
3 cups of Brussels Sprouts, halved
4 cloves of Garlic, minced
3 TBSP Olive Oil
2 TBSP Brown Sugar
Salt & Pepper, to taste
1 cup Cranberries
½ cup chopped Pecans
Mashed Potato Ingredients:
Quick Mashed Potato, Organic 3.5 oz
2 TBSP Vegan Butter
Splash of Almond Milk
Pinch of dried Oregano
Salt & Pepper, to taste
Vegan Gravy Ingredients:
2 TBSP Vegan Butter (or Olive Oil)
2 TBSP Flour
1 cup Vegetable Broth
½ TSP Onion powder, Thyme, Oregano
Instructions:
|Roasted Veggies|
-Preheat oven to 425F. Prepare baking sheet lined with parchment paper or foil. In a large bowl, mix all ingredients except for cranberries and pecans. Spread everything on the baking sheet and pop in the oven. Bake for 20-25 minutes. (Sprinkle a little Booty Band Exercises while you wait). About halfway through the cooking time, flip and stir everything on the baking sheet and sprinkle everything with cranberries & pecans.
|Mashed Potatoes|
-While everything is baking you can boil your potatoes on one element and make the gravy on another. You can use QUICK POTATOES (like the video shows) or boil potatoes for 15 minutes (until fork tender) before mashing them with vegetable broth, vegan butter, salt, dried thyme and oregano.
|Vegan Gravy|
-In a small saucepan heat vegan butter over medium heat. Once hot, whisk in the flour, salt, thyme, and oregano, and mix well. Cook for 1 minute before slowly whisking in the veggie broth (you may find you need a little more or less depending on your preferred consistency.) Simmer for 3-5 minutes until thick, adjusting the consistency with extra vegetable broth.
Serve with Cranberry Sauce. ENJOY!
