It’s a must try guys, you won’t regret it, promise.
Sweet, creamy, full of vegetables and flavor.
Easy and quick to make and very affordable.
Family size 6-8 servings/Cut in ½
Or you’ll have some leftovers and no need of cooking the next day.
The ingredients you’ll need:
1½ cups red lentils, soak for a few hours.
I soaked it in the morning.
4 potatoes, peeled and diced
4 onions, diced
Small piece ginger, diced
2 carrots, peeled and diced
1 cup corn
1 cup peas
1 can coconut milk
3-4 tbsp tomato paste
4 cups water
1 bunch cilantro, washed & diced
Spices:
1 tsp salt
¼ tsp pepper
1 tsp onion powder
1 tsp turmeric
1 tsp curry
3 tbsp nutritional yeast
Instructions:
Fry all the vegetables on high heat with closed lid for about 10-15 minutes.
Then add washed & strained lentils, coconut milk, tomato paste and spices, mix well and then add water.
Bring to boil, then lower the heat and let it cook for about 20-30 minutes or until potatoes and lentils are ready.
Serve while still warm, it was the best.
I wanted to serve it with Brazilian cheese bread, but I had to do my editing 😉, so we ate it as it is and it was very filling.
