-Olive oil
– 1 large onion, with skin
– 3 sticks of celery
– 2 large carrots
– 1 blub of garlic
– 2 star anise
– 1 TBS black peppercorns
– salt to taste
Vegetable Paella for 2
– Olive oil
– 110g / 3.8oz of Bomba rice ( can sub with Arborio Rice )
– 180g / 6oz grated tomato
– 400ml / 13.5oz of stock
– 1 half red bell pepper
– 50g / 2oz green beans
– 6 asparagus
– 4 baby artichokes
– pinch of saffron (optional)
– salt to taste
– pimentos for garnish
