INGREDIENTS
Filling2 cups of potatoes, cubed (this was about 3 small potatoes)
1/2 cup frozen corn
1 can black beans, drained and rinsed (15.5oz)
1 tsp nutritional yeast
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp salt
1/4 tsp chili powder
1/2 cup water

Red Enchilada Sauce
1 6 oz can tomato paste
2 cups water
1 tsp chili powder
1/8 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp sugar
1/2 tsp salt (or to taste)
1/8 tsp cayenne pepper (or to taste)

8 tortillas
3/4 cup vegan cheddar shreds
*if you want to do vegan cheese melting hack 1/4 cup plant milk
Cilantro, lime, green onion, avocado for garnish
