A vegan take on the classic broccoli and cheddar soup. In this recipe we use a handful of plant based ingredients to make a quick and easy broccoli cheddar soup that is creamy, cheesy and of course vegan!
Recipe:
Ingredients
– Drizzle of olive oil
– 1 cup chopped onion
– 2 cloves minced garlic
– 1 tsp dried thyme
– 3 cups chopped cauliflower
– 3 cups chopped broccoli
– 2 cups vegetable broth
– ½ cup nutritional yeast
– 1 cup unsweetened non-dairy milk
– Salt and pepper
Instructions
1. Heat a drizzle of olive oil in a large pot over medium heat
2. Add in chopped onion and cook a few minutes to soften
3. Mix in dried thyme and garlic and cook a few more minutes
4. Add in chopped cauliflower and broccoli, mix and pour vegetable stalk over top
5. Bring everything to a simmer, cover and cook about 10 minutes until veggies are soft
6. Add in nutritional yeast and combine well
7. Add in non-dairy milk, combine well and bring back up to a simmer to combine and warm everything together
8. Let cool a few minutes and use either an immersion blender, a regular blender or a potato masher (soup will be chunkier) to achieve desired consistency.
9. Serve hot
