** Feb 2017 update – upon new testing the amount of water you need to use might vary depending on the season and your room temperature. I’ve been using 1 1/2 cups of warm water with 3 cups all-purpose flour. You can reduce to 1 tbsp of sugar as well. You can also speed this process up by using quick rise yeast which you mix into the dry ingredients. You don’t do a first rise, but let the ball of dough rest for 10 minutes. Then it only needs 1 hour of rising after you form the rolls and place them in the pan **
