This Vegan Gingerbread Cookies Turned out to be my favorite! They are sugar-free and oil-free.
This time I made them with ground nuts and orange zest but plain are also great!

✅ INGREDIENTS:
tsp = teaspoon; tbs = tablespoon
♥ 350g all-purpose flour
♥ 60g walnuts
♥ 2 tsp gingerbread spice mix (here is my homemade version: https://youtu.be/qw6mr4Regvw)
♥ 2 tbs cocoa powder (unsweetened)
♥ 1 tsp baking powder
♥ 1/2 tsp flaky salt (1/4 tsp if you are using fine table salt)
♥ 1/2 orange, zest
♥ 260g date puree (made with 200g dried dates + 100ml water; for method see video ♥)
♥ 100g peanut butter (100% peanuts: https://amzn.to/34pkriu)
♥ 2 tbs ground flax seeds + 6 tbs hot water (let it seat for 3-5min)
Icing (optional):
♥ 2 tbs icing sugar
♥ 2 tsp water
♥ 1/2 orange, zest
