LAY HO MA everyone! You’re in for a real treat! This is the ultimate one pot meal – everything is cooked in one pot and its packed with flavour! Join me in this episode and learn how to make Spanish vegan paella with saffron, sausage, and rice. Let’s begin.
Ingredients:
1 ½ cup arborio rice
1 cup water
2 sausages (I used Field Roast brand in this episode)
3 pieces garlic
1 onion
4 cremini mushrooms
½ cup peas
½ cup minced red pepper
1 ½ cup chopped tomatoes
a pinch of saffron
1 tbsp smoked paprika
2 tbsp lemon juice
salt
pepper
2 tbsp olive oil
couple sprigs of parsley
Directions:
1. Finely chop the garlic and onion. Set aside
2. De-seed the red peppers. Then, finely chop
3. Finely chop the mushrooms
4. Slice the sausages
5. Rinse and drain the rice in cold water 2-3 times
6. Heat up a pan on medium heat. Add olive oil
7. Sauté the onion and garlic for about 3min. Season with salt and pepper
8. Add the sausage and sauté for another 2min, then add the mushrooms
9. Sauté for another 2min, then add the smoked paprika
10. Add the red pepper and chopped tomatoes. Stir around the tomatoes – use them to deglaze the pan
11. Add the rice. Season with salt and give it a stir
12. Add the frozen peas along with 1 cup water
13. Add the saffron, lemon juice, and stir
14. Bring the paella to a boil, then reduce the heat to medium low. Stir the paella to release any rice sticking on the bottom of the pan. Cover, and cook for 20min
15. Garnish with fresh parsley
