Vegan Recipes – Plant Based Cooking – My take on Cheesy Broccoli

I based the cheese sauce off of Dr. Caldwell Esselstyn’s “Better than Grilled Cheese” recipe. It was very tasty but way to gooey for a sandwich. So I came up with this very healthy alternative to Cheesy Broccoli which I think is one of my tastiest recipes yet.

INGREDIENTS
**Broccoli**
4 Heads of Broccoli cut into bite sized florets
4 Cloves of Garlic minced
Oil of Choice (Optional)
Salt to taste
**Sauce**
2/3 Cup Vegetable Stock
1/3 Cup Nutritional Yeast
2 Tbsp Hummus
2 Tbsp Whole Wheat Flour
1 ½ Tbsp Ketchup
1 Tsp Onion Powder
½ Tsp Turmeric
½ Tsp Dry Mustard
Red Pepper Flake to Taste
Salt to taste (Optional)
INSTRUCTIONS:
1. Sauté the Broccoli florets in Oil of choice for 3min
2. Stir and sauté for 3min more
3. Add 1/3 Cup water and cover for 3min
4. Check tenderness, season to taste, and set aside
5. For the Sauce, in a small sauce pan, add: the Stock, Nutritional Yeast, Hummus, Whole Wheat Flour, Ketchup, Onion Powder, Turmeric, Dry Mustard
6. Place the sauce pan over medium heat and stir until thick as Velveeta
7. Combine the Broccoli and Sauce, and garnish with Red Pepper Flakes
8. Add Brown Rice if desired!
