Paella is a great summer dish. I love how light this dish gets when I swop rice for quinoa.
ingredients:
150 gr. quinoa
500 ml hot vegetable stock
1 onion
1 bell pepper
1 courgette
1 fennel
2 cloves of garlic
4-5 grilled artichoke hearts in oil
2 large tomatoβs
1 cup frozen peas
1 red chili pepper
1 lemon
small bunch of parsley
1 tsp smoked paprika
large pinch of saffron
2 bay leaves
salt and pepper
