Vermicelli Pulao is a spicy/savory preparation in which roasted vermicelli is with vegetables and spices. It is an alternative to the regular pulao made with rice. Besides, it is a delicious vegetarian/vegan meal option.

Ingredients for Vermicelli Pulao:
Roasted Vermicelli β 1 Β½ cup;
Onions β chopped, 1 Β½ cup;
Ginger paste β ΒΎ tbsp;
Garlic paste β 1 Β½ tbsp;
Spices β 6 cloves, 1β³ piece of cinnamon, 1 tsp cumin seeds, Β½ tsp each of turmeric powder and red chilli powder(or as per taste), 1tsp coriander powder, 1 Β½ tsp garam masala powder;
Mixed vegetables β 1 to 1Β½ cups (chopped green beans, frozen peas, carrots, bell peppers/capsicum etc.)
Tomatoes β crushed/chopped, Β½ cup;
Coriander leaves/cilantro β finely chopped, ΒΌ cup;
Salt to taste
Cooking oil β 2 to 3 tbsp;
Water β 2Β½ to 3 cups.
