1 cup Oats (Rolled or Quick)
1 tbsp Ground Flaxseed
1 tbsp Fresh Mint, finely chopped
1 tbsp Cacao or Carob Powder
2.5 cups water (or plant based milk of choice)
Optional Toppings: Blackstrap Molasses, Cacao Nibs, Buckwheat Groats, Fresh Mint
[ CRISPY BREAKFAST POTATOES ]
3-4 Medium Russet Potatoes
2 tbsp Tomato Paste
2 tbsp Water
1 tsp Ground Cumin
ΒΌ tsp Garlic Powder
Nutritional Yeast
Optional Toppings: Hot Sauce, Steamed Greens, or Other Veggies of Choice
[ SWEET POTATO MASH ]
2 Small/Medium Sweet Potatoes
1 tbsp Ground Flaxseed
Heaping ΒΌ tsp Ground Cinnamon
2 TBSP Plant Milk of Choice

Vegan Yogurt of Choice
Banana Slices
Buckwheat Groats (or Granola of choice)
*I ate the sweet potato mash warmed and fresh out of the oven, but you could also make in advance and heat it up later. I think it goes great when contrasted with the cooling yogurt
