You can also make it a cold brew for an antioxidant rich drink! I always keep a big pot of it in the fridge with some mint and grated ginger. Great to add to smoothies or to have hot on a colder day.
BREAKFAST
Buckwheat crêpes / makes 6-8
3/4 cups Bob’s Red Mill Buckwheat Flour http://bit.ly/2ePkLi0
1/2 tbsp Bob’s Red Mill, Whole Ground Flaxseed Meal http://bit.ly/2g4I8Eh
A dash of Frontier Natural Products, Organic Ceylon Cinnamon http://bit.ly/2ePjfMW
1 1/2 cups of plant milk
Mix all ingredients together in a blender.
Pour onto a non-stick/greased pan on medium heat and you’re done.
If batter thickens throughout process just add a bit more milk.
Apple Pecan filling
3 Apples chopped and cored
1/2 cup Now Foods, Real Food, Raw Pecans http://bit.ly/2ePf6Zp
2-3 tsp Frontier Natural Products, Organic Ceylon Cinnamon http://bit.ly/2ePjfMW
1 tbsp of sweetener
Lemon juice
Cook everything in a pot until apples become soft.
Proceed to fill crepes with apple and pecan mixture and devour.
LUNCH
Pumpkin Pasta Bake / makes enough for 4-6 people
2 packs of DeBoles, Rice Plus Golden Flax Pasta, Spirals, Gluten Free http://bit.ly/2g3yIVL
Half cook pasta, drain and place in casserole dish.
Cheesy Pumpkin Sauce:
2 large onions
8 cloves of garlic
3 cups of cooked pumpkin
3/4 cup of Frontier Natural Products, Nutritional Yeast http://bit.ly/2g56w6s
1/2 cup of Now Foods, Real Food Organic, Whole, Raw Cashews http://bit.ly/2fcRpsR
1 1/4 cup plant milk plus 1/4 cup extra
A generous dash of Simply Organic, All-Purpose Seasoning http://bit.ly/2grVQlS
A dash of Simply Organic, Garlic Powder http://bit.ly/2fpzSv3
Soak cashews in hot water for 10 minutes
Sauté onion and garlic in pan until nice and golden
In a blender add cooked pumpkin, sautéd onion and garlic, nutritional yeast, drained cashews, milk and seasonings until smooth. If too thick add a bit more liquid
Add sauce and mix so all pasta is covered (You will have leftover sauce! Refrigerate to have as a dip, for sandwiches, or pizza!)
Add about 1/4 cup of extra milk to the dish and mix
Add veggies of your choice or leave as is
Parmesan:
1/2 cup of Now Foods, Real Food, Whole, Raw Brazil Nuts, Unsalted http://bit.ly/2g5htF4

A dash of Simply Organic, Garlic Powder http://bit.ly/2fpzSv3
2 sage leaves
Salt to taste
Put all ingredients in blender/grinder and pulse
Sprinkle over casserole before putting in the oven
Bake for 25-30 mins in 180˚C/350F or until golden
Top with 1 bag of Alive & Radiant, Kale Krunch, Quite Cheezy http://bit.ly/2fNwRFf
Take out of oven and sprinkle with crunchy kale! It makes all the difference. We wish we had ordered 5 more
DINNER
Pumpkin Fall Pizza
Base:
2 Namaste Foods, Pizza Crust Mix, Gluten Free (aka easiest, tastiest GF pizza base we’ve ever had, coeliacs REJOICE) http://bit.ly/2ePf1F5
Cook base as per packet instructions
Sauce:
1 cup of pasta bake pumpkin sauce
1/2 cup of Now Foods, Real Food Organic, Whole, Raw Cashews http://bit.ly/2fcRpsR
Generous sprinkle of Frontier Natural Products, Pizza Seasoning http://bit.ly/2g6EEir
1/2 cup of cooked Bob’s Red Mill, Lentils http://bit.ly/2g3xzxM
Put all ingredients in blender
Add sauce and toppings of choice to your pizza base and put back in the oven until golden
